Chief Stew
Joined the vessel during a busy shipyard period in Toulon, South of France, and quickly took charge of assembling a team, hiring day workers, and supervising contractors to ensure the interior setup was completed efficiently and to the owner's exacting standards. Proactive approach and leadership were instrumental in managing the complexities of the shipyard phase. During time on board, I restructured the interior department by creating new inventories and establishing Standard Operating Procedures (SOPs), greatly enhancing the department's organization and efficiency. I ensured my team was highly proficient in all aspects of guest service, including daily service, silver and wine service, as well as the seamless operation of housekeeping and laundry, maintaining the highest standards when guests were on board. In addition to CS role I managed interior accounts, credit card reconciliations, Centtrip accounts, and charter APA accounts, When the yacht was without a chef for two weeks, I stepped up to cook lunches and dinners for a crew of 12. Reason for leaving: high crew turnover due to owners high micromanage style
Chief Stew
Joined the vessel at the end of the winter season and took on the critical task of recruiting a new interior team of five for the upcoming season. Set up the entire interior to meet the owner's high standards, reorganizing the department and creating comprehensive SOPs to enhance efficiency and consistency in service. Managing the vessel’s interior credit card accounts was a significant part of role, including meticulous monthly financial reporting to the management company. With the vessel based at anchor and the owner living on board full-time, I ensured the interior team delivered exceptional daily service, from housekeeping to fine dining. I demonstrated my skills in itinerary planning and event management by creating a tailored five-day itinerary for guests staying at a nearby hotel. I arranged a variety of activities, providing unique and memorable experiences both onshore and onboard. After busy summer I had responsibility of closing the vessel for the winter. Update of all inventories, including an extensive wine list, cutlery, crockery, linen, and crew uniforms, ensuring everything was accounted for and in optimal condition. Creating a comprehensive work list for the interior department. This involved identifying maintenance needs, deep cleaning schedules, and any necessary repairs or upgrades to ensure the yacht remained in top condition. Coordinating with contractors, collecting quotations and negotiating terms to align with the management company’s budget and standards. Reason for leaving: crew dynamics
