Hobbies & Interests
I enjoy fishing, particularly sea fishing, playing and teaching guitar, mountain biking, gardening, foraging, open fire cooking, American BBQ, camping, and hiking.

Pastry Sous
70 cover restaurant with French/Scottish fine dining cuisine plus up to 60 afternoon tea, number of covers, 7 chefs per day across the whole kitchen. 2-3 chefs on pastry, owned by world leading tennis player.
Director/Private Chef
CurrentPrivate chef work and consultancy over Scotland/England & France, menus and cuisines chosen by the principles. From tasting menus for UHNW clients to Healthy fresh and seasonal yoga retreats (up to 24 guests plus 2 staff). I am the only chef for my business.
Head Pastry Chef
One of Scotland's top walk-in only (non-wholesale) bakeries, from viennoiserie - petit gateaux. 45 options of pastries 30x ptns of each (60x ptns of each during any food festivals). Myself and 1 other pastry chef and part-time chef. Head baker would help to cover days off.
