CurrentWork in a team of 9 chefs on at a time, 3 galleys, overseeing all guests and crew food. MY Serene is the flagship in a fleet of 14 boats working for a very high-profile owner. We have a multi-national galley team, all specializing in different cuisines (Asian, Italian, Lebanese) and learn skills from each other.

A busy season on cooking for guests & crew on back to back boss trips + charters. Every night the owners would expect canapes, 4 course meals etc. Their high standards pushed the head chef & I to perform our best and create interesting new menus constantly.

Responsible for cooking & menu planning for 32 crew with a range of dietary requirements. During the winter season we had 3 consecutive parties that hosted over 500 guests for the Jeddah Formula 1, inbetween back to back boss trips. In the summer we had 6 weeks of charter + 5 boss trips.
