Experience
Temp Crew Chef
I relieved the chef onboard to do a crossing from Seycheller to Turkey. We did a 16 day passage through the suez canal without getting provisons. Everyone was happy with the level of food they received and i was glad to get crucial experience on a larger size vessel to learn all the ins and out of the tachying world. I also was a watchkeeper in the evenings helping out the captain.
Seasonal Sous Chef at International Restaurant
Preparation of International and German cuisine, a Silver Service restaurant. Creating and preparing specials whilst maintaining creativity by changing specials frequently. All restaurant food orders and provisioning. Maintain high hygienic and cleanliness standards.
Sous Chef
Worked under the Head Chef and managed skeleton Commi Chefs during busy periods. Stepped up to Head Chef during his vacations. 70 pax restaurant in winter and 40 pax in Summer. Classic French style cuisine with a modern twist. Catered for large functions which included canapes, buffet style and plated desserts. Predominantly seafood with some meat and vegetarian options on the menu. Creatively prepared different weekly specials.
