To Whom It May Concern, I am a qualified Chef with 40 years of experience in the industry. My profession has taken me internationally, exploring all levels of establishments. In 1999, I solely created a restaurant in my home region of Provence that offered a unique dining experience, followed by a Guesthouse/Restaurant. Both were in all the top guide books of France. In 2008, I commenced a successful Restaurant/Cafe business La Table in the Byron Bay region of NSW, Australia that was sold in 2015. This was recommended in the SMH’s ‘Good Food Guide’ and listed in their ‘Top 10 Sustainable Restaurants’. With the desire to share my passion, knowledge and experience, I have been teaching at various establishments since 2016. My experience has enabled me to develop a broad range of skills, styles and knowledge within the industry. I am a versatile, organized and adaptable professional, with high standards for cleanliness and details. I've cooked on various recreational sailing vessels and done crossings in The Coral Sea, The Mediterranean and the Atlantic Sea. I am seeking a role in Europe this summer where I can apply my professional skills, capabilities and knowledge, allowing me to continue to learn within a vibrant and interesting environment.
